Serves 4
Simple dish that stores well.
Ingredients:
1 instant pie crust (refrigerated version works better than frozen, but either is OK)
6 strips bacon, cooked
5 eggs
2 cups milk (skim is fine)
2 Tbsp Worcestershire sauce
Pinch white pepper
Pinch salt
1 small onion, finely chopped
1 cup grated Swiss
1 cup grated Cheddar or Mozzarella
Pinch paprika (optional)
Heat oven to 400F.
Start by frying bacon until crisp. (Drain on paper towels when done.)
While bacon is cooking, beat eggs, then add milk, Worcestershire sauce, white pepper and salt, and beat combo well.
To same bowl, add onion, grated cheeses, and crumbled bacon when cooked. Blend together.
Put pie shell (in tin or pie pan) on baking tray (in case liquid overflows when putting in oven).
Add bowl mixture to pie shell, then sprinkle surface with paprika.
Cook for 45 minutes in middle of oven. Check with toothpick in center for doneness.
Let cool 10 minutes before serving (to avoid crumbling and soggy plates).
