Looks like the first snowfall isn’t too far around the corner, so we’re prepping for winter like squirrels. A chilly (but sunny) hike yesterday at Wolfe’s Neck Park (outside Freeport) made us run to the store afterward for chili and ragu sauce ingredients. This ragu, a recipe we learned in Italy, is also called “bolognese” sauce (from Bologna, the capital of Emilia Romagna).
Thom won’t part yet with his chili recipe, but here are instructions for the ragu, a perfect cold weather comfort food. Your house will smell gooood while this one’s simmering. (Hints: It’s definitely tasty with the sweet sausage, but it’s fantastic with the spicy sausage. Use fresh basil and not dried, and don’t overdo the sugar.) Buon appetito.
